How do I get unique variant abilities?

So I'm pretty new to this game. I saw that some items have the yellow ability and just read they're unique variants.

How do I get one on my equipment? Also, I noticed they have low, medium, and high. How do I receive a high one?

To summarize: you can randomly receive random UVs every time you Craft a piece of Equipment. You can also receive random UVs by spending large amounts of Crowns at Punch's Variant Smithy.
