If I'm understanding the question right, you are asking about specific resistances vs specific monster types.
For Gremlins & Constructs, I'd take stun resistance over poison. Lumbers and Gremlins both deal stun and it can be super annoying. Poison isn't too bad a status to be inflicted with unless you are getting repeatedly hit since it decreases your defense along with your offense. But Stun can be killer if a lumber hits you, then a group of mecha knights catch up to you and take you out when you can't run away.
In T3 most undead are going to be of the Fire verity. I say this because of FSC. If you are talking Fiends or outside of FSC, then I'd take Shock resistance since it is much more deadly. Shock forces you to put your shield down and makes you stand still for a short period of time. While fire can be deadly, it doesn't hinder running away or fighting monsters (well, fire does stop charging).
Vs gremlin/construct: Elemental
Vs fiend/undead: shadow
If you want to talk status: Gremlins cause stun, and fire from the flamethrowers. Constructs have a variant for each status
Fiend/Undead: Each have a variant for a status.
And before someone claims I give bad advice, I'm going to say status resistance is up to you. Which one you consider more dangerous.
