Spiral Knights does not currently have a system that allows you to change the height or eyes of your Knight.
You may be getting the height idea from NPCs, such as the ones in the arcade, who appear bigger than player Knights. So far this seems exclusive to NPCs, and has nothing to do with player-made Knights.
As for eyes - Nick himself did make a statement fairly relevant to this, not too long ago:

Edit: Apparently the latest patch has added some suspicious check boxes to the options menu, which also suggest the addition of a height-changing feature, while strengthening that of an eye-changing one. Hopefully next patch we'll find out where to change our Knight's features, if that's what these options are intended for.

"Change height"
You reach an elevator. You click "descend." A prompt appears: "If you continue then you cannot chose to return to haven until you have completed the next level. Are you sure you want to change heights?"

I'm not getting my hopes up. :) I think what really gives it away is that it's directly underneath the other customization prompts. Hopefully we'll know within the next patch or two.

You don't change heights in
You don't change heights in context of elevators, you either descend or ascend. That's only some engrish that would come up in some messy translation.
