I just noticed that the Sentenza bird and AP bird dont fly out at the same speed. Sent's bird fly much faster for some reason.
Is this just me or has anyone else noticed this?

It's just an illusion.
Other than taking into account how much ASI and CTR both gunners have when using the charge attack, it's commonly known that guns appear to shoot differently when seen clientside (only you can see it on your computer) and serverside (everyone in the game can see it). Projectile speed is the most common (if not the only) illusion with guns.
But either way the charge attack is very lackluster and not really worth using to be honest.

Speed appears same.
I did not record to give you an definitive answer, but I equipped both (fully leveled) and tested them repeatedly back to back using CTR Very High (so the wait would be less). My impression supports Dukeplatypus. They appear to be exactly the same in every way including speed, save for the color & particle effects.
*Notes* My connect strength is always full bars (when party leader) on a 12Mbps down/ 2Mbps up unshared connection and my water-cooled monstrosity of a computer is very much overkill for SK's system requirements.
It's because the undead are a major source of fats and carbon hydrates whereas the gremlin are much more protein based diet.
Flying slower is a natural side-effect for being obese. Sure the eagle exercises alot more often but that wont make up for the poor diet
The owl only gets to feast on low carb & fat gremlins, that keeps him fit even with less exercise
