In fact, Luguiru, that is exactly how it used to be! It was possible to make 5* items without them being bound, but there was no way to unbind. Now, I think all the high end items will be bound, but you have the joy of unbinding!

Aquajag is mostly correct.
All 4* or 5* items that have a prerequisite equipment to craft them (i.e. you need to craft another item in its line before you can make the next level up) will be bound, in general. This is because they require heat, something that you lose after unbinding.
The only unbound items are those which have either been unbound by previous owners, as he says, or high-level item drops you were lucky enough to get for free from a treasure box.

So yeah, you need to buy CE to unbind anything except a 1* item, and really who'd want that?

It is entirely intentional that it requires energy to pry items off you. Without that requirement people could roll around with a 5* quadruple max UV Shadow Lair whatever, then sell it without paying a cent.
