Just get the Omega Shell. It is easy to craft, has lots of shield HP, and it looks cool on your characters back.
1 - Generally speaking, the Stone Tortoise line appears to be easier to craft. The mats are easier to acquire; Dragon Scale can be bought with Primal Sparks, the candy of token types, whereas the 5* final forms of the Plate line requires mats such as Sun Silver (Forge Tokens) or Shadow Steel (Grim Tokens).
2 - Omega Shell has what looks like the highest HP of all the shields in the game, as well as a decent amount of normal defense. The Plate series have slightly less HP, but slightly more (maxed?) normal defense; in addition, the Volcanic Plate has Fire/Stun resistance, the Ironmight has Piercing defense/Stun resistance (unsure about the stats on Ancient Plate Shield - wiki may not be up to date, but it's listing it as the same as the Volcanic minus the Fire resist).
3 - The recipes themselves appear easier to acquire. Personally I've seen both the 4* and 5* recipes multiple times on Basil runs, both T2 and T3. I've not yet seen any of the 5* Plate Shield recipes, and the 3* (Boosted) has also eluded me.
Personally I may use the Tortoise line as a stop-gap, until such a time that I'm able to acquire the complete Plate line.
