if i buy dlc like guardian armor and i delete my knight or all of my existing characters does the guardian armor or whatever content i purchase go away?

Uninstalling and reinstalling the game will not delete your account.
As Artistbma has said, if you delete the account or knight the extra content is bound to, you will lose your access to the content.
I'm pretty sure if you delete the knight the armor was sent to, it is lost.
