Is there a way to view your overall stats?
like atk spd, resists, defense info, total health, that kind of thing?
For the life of me I can't find it on the in game menus..

If you mean the cumulative
If you mean the cumulative effects of your gear, mouse over the icons at the bottom of your character window.
If you mean the hard numbers behind the stats, those are hidden on purpose.
Click on the little knight icon circle in the upper right of your screen. That will open your knight info. Your stats change based on your equipped gear, but you can view them by hovering over the icons at the bottom of your knight info page. The helmet-looking icon shows your defense stats. The weapon icons show your weapon stats, including the effect of any bonuses your armor imparts.
For instance, when I hover over my bomb icon, I see "Charge Time Reduction: Very High" because my Heavy demo armor and helmet each have low CTR and the level 10 bomb has medium and 2 low + medium = very high combined effect.
