The 3-star versions are worth 2-3k CE, IIRC.
This means the 5-star versions are probably worth around 6-7k CE, although they would probably be harder to sell than the 3-star versions.

Assume all 5* non-boss token/krogmo token weapons are worth 5k ce. Token/boss items (excluding BTB which is a reskin FF) are worth about 5.2-5.4k ce no uv. UV's that compliment the weapons damage type (i.e. grem/slime on shadow weapon) are the only non-CTR/ASI uv's that add value. An ASI/CTR med will add more value than a VH damage type that matches weapon IMO. CTR/ASI== better damage&DEFENSE vs all mobs. Consider this, asi is one of the best defensive UV's on the game, and you get it on swords!!! CTR has similar effect given pushback/safeness of many charge attacks.
