I am new to this game (only on 5-1) and i was wondering what would be the best load-out that i can build upon and upgrade but still withstand all the levels. I do want to keep my calibur and defender (im a big fan of all the standard stuff). I was leaning toward working on my cobalt but then i recently got wolver.... suggestions?

It's true that you'll eventually want multiple pieces that you can configure based on the weapons you're using or the monsters you're facing. In the meantime, I suggest Divine Veil with Skolver Coat. This set protects against all four damage types, the three most important statuses (fire, freeze, and shock), and another status (curse). My secondary knight uses this set in all situations (except Shadow Lairs).
I'm not sure why you're so confident that you want to stick with Calibur/Leviathan and Defender/Aegis. Levi isn't bad, but there are certainly better swords out there, and Aegis is bad compared to Barbarous Thorn Shield (if you use swords). And we don't know what your second (and third, ...) weapon is. You might find my detailed sword guide helpful.
You're on 5-1. When you reach Royal Jelly you should at least give a try to sealed swords.
I mean, of course I will switch to different weapons time to to time, but I always loved the idea of having one thing that I take through everything with me (like in pokemon where you probably drag ur starter through everything and it is always in your party) I will switch shields and swords and maybe even expand my general playing style to guns and bombs, but I would like to have the levi there just so i know it is there ( may sound kinda weird since this is all virtual) Plus, i gave it very high charge time reduction which im not sure is good, but may be helpful since the calibur offers a great charge attack.
A Calibur with good Charge Time Reduction is worth a small fortune to players. I would probably keep it around, but at the same time a 2* Calibur with Charge Time Reduction Very High could net you well over 100k crowns.
Like others said, it's best to not get too attached to what armor you wear. I personally got one armor set for each damage type that I slowly started upgrading. What I did get attached to was my appearance/costume. Because of the costume armor slot, you can wander around wearing 2* armor yet still have the effect of maxed out 5* armor.
i'd say of all attack types, piercing attacks pose the least threat. at 5-1 i think you're around RJP? jellies and jelly turrets are very easy to evade once you get the hang of it, and beasts are so easy to manage i think we should all get pet versions of them. in contrast i'd say shadow attacks are the largest threat with elemental at second. basically you wont need piercing defense once u get the hang of evasion, shield bumping and shield canceling. however if you want to keep at the cobalt lines cuz they're sexy, well that's your business :P
i'd recommend the divine set, which features near immunity to shock and fire, AND supplies defenses against elemental and shadow! it also gives a medium bonus against fiends but the other stats are far more important. now it isnt the optimal set for RJP, but for vanaduke and the 4 danger missions, it is a good set to use (least effective in c42, but still relevant due to fire resist!).
why i think its a better all around set ( you dont have to read this OP, but its more in depth fyi stuff):
some people suggested vog, and while the fire resist is a nice bonus for vanaduke, the ASI it provides wouldnt help as much as damage bonus and can easily be matched with some decent shield canceling skills. the elemental resist is great for the mask phases of vanaduke, but since vog is purely elemental, you may still end up getting a shadow resist set against t3 fiends. you will also find that shock is the most annoying status resist ever, whereas you may be like, "what shock?" with divine.
divine provides no normal defense. as you probably already know, in t3 normal damage type is very rare and t1 and t2 have combinations of normal damage combined with the special attack type of the particular monster. vanaduke does deal normal damage with his hammer attack, and his two guards do as well. therefore you must evade it at all costs. other than that, everything else should be more than adequately defended by your gear. remember the essence of this game is evasion, not taking hits, and no armor combination with any combination of UVs will allow you to charge through t3 enemies like godzilla.
I agree with Nergee's endorsement of Divine Veil, especially for the status protections. But I do not recommend wearing both pieces of Divine at the same time, due to the lack of normal. Normal damage is not really rare in Tier 3. As Nergee mentioned, Vanaduke and his slag guards do tons of normal, and they're the hard part of FSC. Trojans also do tons of normal. And other monsters all over Tier 3 deal some normal too.
Nergee, do you actually wear a full Divine set often? Don't you find that you get mauled? Or do you survive well, simply because you evade everything? Have you tried tanking damage, and seeing how your armor stands up? (I don't have both pieces; my advice is theoretical only. :)

@negree im not attached to my cobalt at all, it is more the calibur that is the problem. The fact that it has charge time reduction: very high isnt helping matters since caliburs have great charge attacked and is very rare as traevelliath said. I have gotten a wolver set that it decent and works well enough on me. But how much would a divine set cost?

note: my problem is NOT the cobalt armor. I was wondering whether a leviathan is a valid choice for all levels (i also understand the aegis isnt the best shield)
no, costume doesn't play a role in your defense. It just hides what armor you are actually wearing. It lets you wear normally hideous armor combinations while not worrying about how you appear.
@bopp: i do have a full set of divine, however i have never actually thought of testing its tanking abilities. i did bring it to GitM and HoI and heated it in FSC, and it performed quite well. however as you suspect, i don't get hit much and thus this may be a less than perfect projection on a new player because of how long i've been playing this game :S. nonetheless, imho the divine set is an excellent accumulation of resistances and defense, so even having one part in a hybrid set it will probably be useful throughout a new player's SK career. if you want to stick with normal defense, the grey feather set sports the same useful status resists.

@ OP: bopp is right that everything does use a little bit of normal, though i think battlepods, vana and slag guards are the only pure normal damage enemies t3 which is why i said it was "rare" ("rare" is not true in the purest sense, but damage tends to have heavier leanings to type in t3, which means more elemental, shadow and piercing pain than ever before, thus specialized armors begin to show prominence). however, if you get hit by a trojan's attack in pure snarbolax set or dread skelly set, it will still hurt very badly despite their defenses specifically aimed to resist fiends. vana's hammer can easily take out more than half your health with health trinkets and max normal defense and then set you on fire on top of it. the fact is, getting hit hurts too much in this game so learn to evade, learn to shield cancel and shield bump and punish monsters after they fail to hit you.

a divine set will cost just as just about as much as a vog or skolver set. the differences of materials are very slight unless you are already pawning off all your mats. in all likelihood, you will have the materials you need to craft whatever you want by the time you get the wealth to craft, so its likely you wont have to pay for mats to make your gears. go with what you like, but keep in mind that FSC will burnnnn without fire resist for a scorching 9 seconds and you will spend most of your end game there grinding for crowns and/or heat. i personally run FSC in pure snarby set for damage so i do feel the 9 second burn sometimes. the vana boss fight will expose you to lots of fire so wear armor or bring a shield that is fire resistant.

the leviathan is a jack of all trades sword, the downside is that it is master of none. there are plenty of players to used to swear by the leviathan when i started playing, but i just ended up getting specialized swords and i like how that worked for me. in purely practical terms, getting a leviathan will save you the cost of all the recipes, which amounts to 39k Crowns, which i would consider pretty good savings for a beginner player. once you learn all the tricks to grinding FSC, it wont be too late to get specialized swords then. i personally went from calibur to sealed sword-> faust, then switched to glacius. for gear i went skolver/vog with owlite shield.
A loadout to withstand all the levels is kinda hard to achieve, given that if you get a set that mixes all the defenses youll get less of each, what i recommend you to do is get a set for each kind of damage ( elemental, shadow ,seems like you got piercing covered) and work from there. since missions always vary damage types. If youre into the arcade clockworks, i suggest you choose piercing damage gates. you also better check the wiki and decide where youre gonna bring that wolver coat to. since you wanna keep cobalt, skolver will be slightly redundant, though it will have a damage bonus. maybe youll be interested in a vog cub set, for elemental defense?
your calibur will probably turn into a leviathan blade, so itll do fine, but given that we have arsenal stations on mostly all the levels, you might want to specialize your damages ( given the cost of that, of course, you should keep your calibur in the meantime). try getting the snarble barb from the snarbolax, so youll already have a good piering weapon.
as for guns and bombs and shadow lair gear variations.. given the circumstancesof the OP i wont touch on them.
