If I get a 4* item to level 10, unbind it, then upgrade it to 5*, will it bind to me again from the upgrade? Or will it still be unbound?

Not strictly true. They just happen to require to be bound in the first place in order to satisfy the level requirements.

Yeah, you can make trinkets without them having to be bound.
Items lose all heat when you unbind them (they reset to level 1), so you can't do this.
