I'm a hybrid gunner/swordsman who wants to plan ahead. I have NO shadow defense and I plan on grinding FSC in the future. I may also do the Darkfire Vanaduke Shadow Lair. I use mainly alchemers and brandishes and I always carry at least one gun (Both as sidearm and main) with me.

Deadshot Chapeau-
Damage Bonus VS Undead Medium
Damage Bonus Guns Low
7 Bars Normal Defense*
6 Bars Shadow Defense*

Shadowsun Stetson-
Damage Bonus Guns Medium
7 Bars Normal Defense*
6 Bars Shadow Defense*

Both have identical defenses but different bonuses.
Please give advice on which to craft and insight on which bonuses to pick.

Well for the zombies of FSC and SL Deadshot can be better. But you wont have damage bonuses agaisnt Trojans and Vana itself.
For a more general set get shadowsun.

Deadshot is too specialist for my liking

Deadshot, whilst it looks like it gives more bonuses, isn't really a great choice. It gives ASI Low as well as a universal damage bonus vs. undead, sure, but undead is just one out of six families, and curse resistance isn't generally useful - or, at least, not unless you're planning on doing a considerable number of UFSC runs. In comparison, Shadowsun gives a handgun damage bonus vs. all enemies, which includes PvP purposes, as well as poison resist (which, I admit, people don't generally find to be especially useful, but the status is more common than curse).

Since you're planning on consistently using guns, I would get a piece of Shadowsun over a piece of Deadshot, and possibly leave the other slot free for a sword-user's armour such as Vog Cub.
