Does anyone know what the best defensive set up is overall?
Skimming the wiki I'm thinking Divine+Mercurial with Volcanic Plate Shield, but waht do I know. Thoughts?

How about this?
Divine Veil + Snarbolax Coat. This gives you a little normal and elemental defense, lots of shadow defense (for the game's toughest foes), fire, shock, poison, freeze, and curse resistance, and damage bonuses against fiends and with swords. Take along an Omega Shell too, since its extra health nearly compensates for lack of defense against special damage types (though not statuses).
You want a single set of helmet, suit, and shield, to protect you in all circumstances? Then Divine Veil, Mercurial Mail, and Volcanic Plate Shield isn't a bad idea. Divine Veil with Skolver Coat is another classic. Fundamentally, there are three armors that don't have normal protection: Divine Veil/Mantle, Radiant Silvermail, and Dragon Scale Helm/Mail. Pair these with another armor piece, of the complementary damage types, to get protection against all four damage types.
Another idea is to forsake piercing protection, because beasts are the easiest monster family and slimes are one of the easiest families too. Giving up on piercing gives you more flexibility for optimizing other aspects of your armor. Arguably, status protections are more important than damage protections anyway.
Probably Grey Owlite Shield is the preferred defensive shield, because elemental projectiles and hazards are so prevalent in the game.
