so yeah.. I wonder at what time the server gets packed with people, cause I want to sell stuff at that time^^

Usually, people are online in the daytime in North America (US & Canada). Most of the people that play Spiral knights probably live in the EST time zone.
But on week days, not many people are online due to school. Some people have business to do in real life. During the summer, expect to see lots of players since there will be vacation.
To answer your question, lots of people come on starting from 5pm to 9:30pm EST.
I'm guessing peak hours are when both Europeans and Americans play. I guess about 15-2 GMT.
