It only has elemental and shadow defense. Does that protect enough or does the lack of normal defense make a noticeable difference?

No normal defense really hurts; you want to be very careful about which stratum you equip it on. Definitely shouldn't be the first or second piece of 5* armor you go after.
On the other hand if the majority of your runs are through fiend/undead areas, or areas with a high elemental content (like the citadel which has both), then it's a fairly good investment. It's also good if you have a faust and like the charge attack. My friend has this hood and he doesn't get cursed that often. I've got an ashtail cap that has some curse resist on it and I get cursed somewhat infrequently, but moreso than he does.
Divine Veil + Ironmight armor or Volcanic Plate or Ancient Armor

Uber Elemental defense and great Phys defense still. And wicked sick resistances.
Oh, and the Divine Veil is the first 5* item I'm aiming for specifically because it offers Shadow defense of which I have none yet except my shield.
Yes, currently I only have the Volcanic Plate Armor and Ironmight Armor, but if you compare the stats with Divine Veil helm + V-Armor your stats will be very BEASTLY in my view especially if you have some nice uv's as well. You would have defense against stun, shock, Fire (Very high), and curse. Its a great setup in my view.
In my view there are many nice set-ups out there what people lack is the time to compare all the armors and helms and make a great mix. Many of the players I see use cookie cutter layouts (Vog Helm and Armor with Grey Owlite Shield).
The setup you will have with Divine Veil and V-Plate Armor will be great for an overall set due to the defense boosts it gives you against mainly all the elements.

I personally can't wait until the next big boss to see how equipment builds will change. I mean, right now those builds are top tier partly because of the fire resist, but perhaps new bosses will see the rise of new kinds of weapons and perhaps, shockingly, diversity! =p
In another light, I almost think that using the Plate Mail, lowering more Attack Speed, has helped me to control my sword and shield a lot better instead of just mashing enemies into corners and hoping not to get hit.
Oh noes, a piercing/ice boss! We're doomed! Our vog cub/divine veil/omega shell combos do nothing! If only I had gone against convention and made a skolver coat instead!
Yup your absolutely right about that when new bosses do come out it may change gear set-ups which will be very interesting for sure. Personally, all my swords are already slow (DA and GF), so I dont really notice the slow movement much, and if I wish to remove the well attack speed I would just need to obtain uv's for the weapons =). The great thing about the plate sets are that it makes you feel like your untouchable since with the right uv's your normal defense can be MAXED out so hits become very little =).
I never knew that you could get max normal defense with proper UVs. O.O
Do you mind sharing what UVs I'd need on to do that?

Well to max out normal defense with:
Divine Veil or Volcanic Plate Armor
is pretty easy:
V-Plate Mail = is basically max normal so any low uv on normal defense would work well with it or even on your divine veil
Now this would be a beastly combo as well:
V-Plate Armor (Elemental Uv: High or Medium) *I have this uv on my ironmight armor instead*, but with Divine Veil with: Elemental High or Shadow High could put you close to having MAXED elemental and normal defense. (Max = the bars are maxed out).
^Maxed elemental with V-plate and maxed normal is possible sorry if what I posted is kinda confusing though. (If I had the divine veil I can see the stats clearly when its equipped on-to me).
I know EXACTLY what you mean about the "cookie-cutter" thing. it really seems as if everyone has they same gear. I initially was working towards the vog cub set and grey owlite shield, but I dont want to lose myself in a crowd, so I'm rethinking my options.

Get what you need for whatever you are running and just wear a costume. I wear vog cub coat and a skolver cap, but wear cobalt and a divine veil for the costume.
thats a good idea, but higher level gear takes so much time and effort for me to get that im just working on the basics for now.
If you can get a Divine Veil with a good UV (for normal), and wear with strong normal armor, it should do well...
At least, that the theory I'll be testing - I just got a Skolver Coat (with elemental UV high) and Divine Veil (with normal UV moderate). This looks to give me decent Normal and Elemental, with some Piercing and Shadow on the side, bonus sword damage, and resistances to freeze, fire, shock, and curse.
Plus, it looks cool. So even if it fails to measure up, well, I have one heck of a costume.

anyways, no normal damage can really kill u. find something with good normal defense.
I thought all curse resist does is just reduce the curse duration?
I wear a divine veil + skolver + aegis just have to be careful around lumbers.
I found the divine veil and vog cub coat to be a great combination in FSC. I've only dropped it for a skolver cap for sword damage bonus, but I definitely love the DV and use it for any undead or fiend stratum.
Depends on what enemies you're fighting.
For example, if you're only fighting kats that will be all you need.
If you are using it for jelly runs it will be useless.
Etc.
