I'm not asking which is more useful in situations, I'm asking which is actually STRONGER. Also I know that their stats go slightly beyond 10/10 bars for normal damage but I'm not too sure how strong each is.
Thanks in advance.

That's still a tricky question, because it depends on what you're measuring. If you're only measuring normal damage resistance, then of course Ancient Plate is stronger. But if you're measuring overall damage resistance, Ironmight is stronger, because it has more normal and piercing defense than Ancient Plate has pure normal defense. If you count the statuses, Volcanic Plate is about as strong as Ironmight. Both would be stronger than Ancient Plate.
What exactly are you measuring?
I think he's talking about normal damage, since the thing you mentioned about normal damage vs piercing and status damage is self-evident, and he says that he knows that tested figures for normal damage are not entirely accurate.
Ancient has about 34% more defence than Ironmight, twice as much as Wolver. There's also the added health.
So considering all that, Volcanic Plate is best because Elemental defence and Fire resistance is just better.
Are we talking about shields or armor? Because the volcanic set doesn't match itself...
"Volcanic Plate is best because Elemental defence and Fire resistance is just better"
That's exactly what I said what not to put... but I appreciate the other part you said.
@Little-Juances I was talking about both, the entire sets.
From what I've heard, people think ancient is stronger, since it would be odd if volcanic/ironmight was just as strong and had status resistance.
