Any shadow/pierce with or without freeze/poison enemy would break it easily.

The best shield is the guardian shield from LD :P

Guardian shield is tied to lockdown. The best shield in existence is known as shield bracelet, and is wielded by cherub. The best all around shield usable by players is probably omega shield. Shields are relatively balanced however, with notable exceptions. Like royal jelly shield and barbarous thorn shield. And swiftstrike buckler, which should be a boss token item to be honest.

Isn't the shield bracelet a trinket? Just for the sake of discussion I think it is just an overpowered trinket.
(It has the icon of other trinket bracelets, i.e. wyrmwood bracelet)

Shields are indeed balanced. I'd say there are some really worthless ones, though. The Royal Jelly shield is really worthless in comparison to BTS and Ironmight Plate Shield. Ancient Plate Shield isn't very desirable in comparison to Volcanic Plate Shield but it's got its uses. Dragon Scale is much of a niche shield, barely being the best anywhere but in Compound 42. Omega Shield is a great all around shield but it's hardly desirable for the late end-game, although that's fine.

And then... There's Aegis. It's where it should be.

The best shield in Spiral Knights is the Swiftstrike Buckler, not for its defense, but for its universal ASI which can support all classes (yes, even bombers).

Defense-wise, the Crest of Almire is arguably the best shield, as it defends against all of the most important damage types and statuses.

For an all-rounder, Stone Tortoise (not Omega Shell) wins hands-down. It blocks stuff with the quality of a 5* shield while being only 4*. The same cannot be said of its successor, though. Omega Shell is still pretty awesome, but doesn't provide a substantial quality increase for its cost.

Is Elemental not as important as Shadow defense in general Tier 3/FSC play?

I would say the Grey Owlite Shield is the best all-around. It grants defenses against the most important damage types, and solid resistances against two very dangerous status effects. And it looks wicked cool.

My personal favourite is the Volcanic Plate Shield. It can shrug off Trojan attacks and doesn't afraid of anything.

Can take quite a beating from other monsters too.

CoA defends against fire & shock fiends and undead. GOS defends against fire and shock constructs and gremlins (which, on the balance, deal fire). Admittedly, mecha knights and gun puppies are pretty deadly, but Devilites really murder me more, and since most people farm FSC, zombies will also be a common threat.

The CoA also has slightly more normal defense than GOS.

GOS has more value against map hazards.

I dunno. It's a pretty close race between CoA and GOS, and their respective deadliest foes (devilite vs. mecha knight) are just about tied for strength, but on the balance, the CoA's improved normal defense renders it the better shield.

But I can't blame you for picking the GOS. It's a pretty darn-good shield.
