I know it stays at level 100, but u know what i mean....
How many levels past 100 do sprites continue to give perks?

Around 4-5 levels past 100, yes. I don't believe there are more than five at most, though.
Mind you, defensive attributes (i.e. Strike Shield, Arcane Shield, Grounding, Hot Blooded, etc.) cap out at High and offensive attribes (i.e. Swift Steps, Deadly Slash, Quick Draw, etc.) cap out at Medium so if those Perks have not yet reached those levels then you know what you're still missing.

What about Purity? I got Purity I and it says its 2* and a low bonus while my Hardheaded, Hot Blooded, and my Grounding II are 2* and gives a medium bonus.
Somewhere around 5. Just count the amount of perks you have that aren't 4* or 5* already.
