So I've been on hiatus for about half a year, and I've decided to start playing again. But I have no idea what the alchemy orbs are, other than the fact that you alchemize stuff with them.
Can someone explain alchemy orbs to me?
It basically makes it easier to craft up a large arsenal without spending a large amount of money/energy
The main downside is the new heating system, which takes longer and is a bit more unreliable.
So the orbs are basically allowing us to have a chance of getting a free craft? Also, I don't thing I'm gonna have much trouble with heat yet. All my stuff is level ten, three star, so until I get a full set of four star gear, I won't have to worry.

I recommend that you worry before then. Otherwise, you may find yourself wasting a lot of heat. Under the current system, your newly crafted 4-star item fills up heat level 1, and then just sits there until you forge it to heat level 2. You might want to read the wiki pages "Forge", "Heat", etc.
OK, so I just read the page on heat, and the stuff about forging. So now I'm wondering: Does the forge actually upgrade the stars, or just the stats? What are fire crystals? And finally, aren't they just forcing you to do what was automatically done at level five a while back every level?
It basically adds in a manual step between going from heat lvl to heat lvl. It also adds in another resource required to make said level up happen.
Fire Crystals are a rare-ish drop from boxes, or buyable from the supply depo en masse (usually you'll find a dozen or so per run). You'll need them to forge.
It's hard to explain, but it'll make sense once you try it out.
Yes, forging is a new thing that greatly complicates the heating process. (It seems to be the least popular part of the 2013-07-30 mega-update, by far.) When your item fills up heat level 7 (for example), it no longer automatically promotes to heat level 8. Instead, you have to use the forge to promote it to heat level 8.
The forging process requires fire crystals (of the appropriate star level). The forging process has a chance of failure, a chance of success, and a chance of super-success (Forge Prize Box, skip the next heat level, etc.). The more fire crystals you apply to the forging, the better your chances. If you visit a locale with lots of treasure boxes --- for example, the treasure area of a danger room or danger mission --- then you will find yourself awash in fire crystals. Or accumulate them slowly, or buy them.
Basically, as you may know, a LOOOOOOOOOOONG time ago, people used CE to craft weapons. Now we gotta grind up the crowns and CE or find these orbs in treasure boxes. It can be a real pain in the arse to find these things, but if you have a massive surplus, they are worth a lump sum on the AH depending on the level.
CE costs are the same thing. 800 energy for 3 eternal orbs = a 5* weapon
It's a bit easier because you don't need to buy or grind CE as much anymore, however, there are some drawbacks to this system i feel.
I don't want to drone on and on about these drawbacks, but that's orbs in a nutshell.
Have you read the release notes? Have you read the wiki page "Rarity"? Or "Crafting"? Those are good places to start. The short version is:
Crafting no longer requires energy. Instead, it requires 3 orbs of the correct star level. There are basically two ways to get orbs: You can find them in the Clockworks occasionally. Or you can buy them with energy, for exactly the same price as the old crafting system required. So the new system is identical to the old system, except that occasionally you get free crafting.
