I would love to be able to play this on it. i read Java is supposed to be supported but the login page says "missing plug-in"

I thought everyone installed the client.
Is Chrome OS even capable of running a separate Java Virtual Machine outside of the browser? If not you're out of luck. Also, it's doubtful that the Intel integrated GPU in that is even capable of running Spiral Knights.
