Soul Eater NOT! as far as I know is just a manga series, and quite short. I've seen it at my book store.
and aside from those, I like D. Gray-man (the subbed voices are better, sorry Krorykinz), Blue Excorcist, and Attack On Titan (which has great artwork).
My preferred animes have original stories and compelling plot.
