At first I thought it was a graphical glitch on one of the blue spiked lichens, but then I realized its core was a skull. Furthermore, items only dropped from it when the skull hit the ground and poofed. Sadly it only dropped crowns and heat, so I don't know what rare item it could potentially drop.
Has anyone ever seen this thing?
That is a soul jelly, a rare jelly spawn. In the future our rare mobs will be dropping interesting stuff.

Once I found a Love Puppy. Upon killing it, I got a Heart Trinket which boosts my Health by 1 bar. Maybe Soul Jellies will have something similar

I think Soul Jelly's are created when that healing Butterfly dies very close to it? That's my experience anyway for all the time's I've seen one popping up.
Firey thing in the slime family. Looking for the name of this one. That screenshot is cut from two as the thing danced over my dead body.

That's an oiler, a mobile oily slime that drops oil puddle or much worse if on fire.
I hate those guys. Mainly because at the same time they're pooping oil everywhere there are numerous spiked wheels coming down on you making it close to impossible to dodge anything because you have to stay between the wheels or else the wheels will hit you and knock you down into a fire.
I think they're really doable :P Just bounce them off with your shield against bypassing wheels. You have plenty of space to stand between wheels too so you can easily dodge them. The only really annoying issue I have with them is that those wheels hit you so far ahead. The wheel can be 2 blocks away and already start shoving you around, makes dodging them a lot harder if you weren't counting on that.
You don't have to fight anything if the wheels are there. Just run back to safety, and the wheels will do all the dirty work.
I've seen the Impostocube a couple times (hair, evil twin goatee and pipe) they gave out a lot more cash than normal monsters but nothing special IIRC.

Oooh neat. Never seen that one before. The only rare *enemy* I ever get is the gunpuppie that shoots hearts.
