You mean being able to pick certain types of variants such as damage vs slime without knowing what strength it will be.
I would say yes to allowing more choice when it comes to what damage boost you can get against certain monsters, but no to letting players be able buy armor resistances and weapon CTR DMG and ASI boosts as this would make the game too easy.

By variant shop, you mean supply depot or Punch, the variant smith?
Also, no to having a trinket that allows you to choose a variant because it would defeat the purpose of having variant tickets.
