Item Prizes
I think items is a cool concept but I think it may be a somewhat problematic one. If knights are being raffled off for reasonably low prices what items could you justify as rewards? Unless of course you know a few folks with extra items they would care to donate. Getting something like a frost gun as a prize because we need to keep it cheap would be a bit of a kill joy. That being said extra low level items from UV farming or off-beat sets might be nice, as they're relatively cheap and it's likely whoever wins won't have one. Anyway, just a thought. Let me know what you think.
(Edit: ... as an after thought I hadn't thought of mats. They would probably make reasonable prizes for the price range as well.)

@Korakc We'll be wanting to start the auction right at 7, but I can't say exactly how long the bidding will go on for for certain. Being realistic, it will probably not start right at 7, so you should be fine! And then of course the volunteer bidder stuff will be right after the raffle and auction.
@Blackskies That is something we have thought of. As has been said before, this isn't really for money, this is mainly for fun! We have certainly considered materials, such as SL mats, mod calibrators, and the ever popular bushy tails, warp dusts and whatnot. UV'd items of low level could be fun too! You are correct though, it is very dependent on how much the bidding goes to, which is why we may just keep it as a pure cr raffle. Are you offering to be a bidder?

I should be fine to help keep things going smoothly from the sidelines however's needed and just take off my "event staff" hat (metaphor or not, remains to be seen :P) when my turn comes.
As far as a raffle goes, we have a few minor details to plan aside from prizes. If the bidders don't mind waiting a short while for prizes, instead of doing the raffle immediately after the bidding is over, we could do it a bit after and give everyone a chance to get together and have a laugh about the whole experience (sort of an after-party) and then we'd have a little time to get appropriate prizes for the budget that the bidding gives us. We could do it on the forum too. We could even send a runner to the AH to snap up a handful of accessories or good-looking items right after bidding is concluded too.
It won't be too difficult or complicated to do something fun for the bidders. :)
It'll largely depend on what appeals to the bidders, and how much they end up wanting to bid.

Small Suggestion
I just won 20 ce on the question of the day! :D Yay for me, but it got me thinking. If you're going to do an "after party" it might be a little hard to try and get people back together. That being said if you really want to do it that way you could send the items / cr to those that don't show up via messages. Of course you could always choose to forgo the after party if it's too much of a logistics issue and just send the messages instead.
P.S. - This would be so much easier with a tabbed or customizable chat system.

And yeah, the party idea is just me "thinking out loud" of ideas for ways to get even more fun out of this for everyone and do something fun with the prizes. If it's a logistical nightmare we can easily enough get prizes to people in a timely manner.
Really, planning for something like that will depend how many volunteers/bidders are around early to do a quick FAQ for the event and chat, or around after to figure something out. :)

@ Kaiju Yes, volunteers will be expected to go on runs with their buyer. That said, when we're doing the auctioning we'll be letting bidders know before they bid (and asking volunteers in advance) if they will be limited in how many levels they can do because of how much energy they have available, whether they are willing to use CE, or have a gate pass.
Volunteers won't be expected to use their CE to go on runs with someone if they don't want to.
@ Isenfir If more volunteer spots open up, I'm sure you can be added.
