Say, for the sake of argument, I crafted 100 Caliburs (like a boss). How many could I expect to be UVs?

From testing I think the consensus is 10% chance that your crafted item will contain a UV. That being said you could expect around 10 Caliburs to have UVs. Although I was crafting haze bombs recently, I don't know if it was luck or what, but I think I was getting more like 15%.

(I'm in 4-Star gear now, and I've been considering trying to grind up decent UV versions of my gear before starting the process of stepping into 5-star).

yes 10%. I was thinking about trying to get some UV on low gear and grinding it up, it can be so costly, honestly your best bet is probably finding it through someone else and just paying them for it.
Maybe 0, maybe 30.
Definitely not 100!
